Description
The truffle hunt takes place in the woods just above the farm. Here you will meet up with your expert truffle hunter and his wonderful dogs, a special breed known as Lagotto. To help you get the best of the companionship of the truffle hunter, a mine of information on truffles, the dogs, the woods and countryside and the local area in general you will be accompanied by an English speaking interpreter - generally the interpreter who also assists in the cooking classes and so will be able to give you tips on storing and using the truffles in the kitchen. The hunt usually lasts between 1 to 2 hours depending on the weather and the luck of the hunt! Next comes the cooking lesson....
We will help you make pasta dishes that you can easily prepare later in your own country with products you can easily find abroad, surprising your friends and family!
Preparation of a typical Italian lunch or dinner, with dishes such as fresh home-made, hand rolled pasta (tagliatelle, tagliolini, pappardelle) or gnocchi di patate (potato dumplings) as a first course, to be preceded by a Tuscan "antipasto" or starter and followed by a main course like our signature chicken dish,say with Vin Santo or with saffron or one of our delicious vegetarian dishes with eggplant or bell peppers. And of course a typical Italian dessert.
Of course, we can always add variations on the basis of any specific request and dietary needs. Lunch/dinner is accompanied by our own Chianti wine.
Naturally the menu will vary depending on the time of the year, for example in different seasons we might suggest: Bruschetta with fresh tomatoes, herbs, local pecorino cheese etc. Handmade tagliatelle with sauces made from fresh garden vegetables, zucchini and saffron or zucchini and mint (an amazing combination),eggplant or peppers, fresh tomato with garlic and basil, squash or artichoke with sausage or pancetta, all depending the best and freshest produce arriving in the kitchen.
Potato gnocchi with a simple, light sauce. Chicken with local Vin Santo wine, with lemon and tarragon or with our own homegrown saffron. Homemade Panna Cotta or Crema Pasticcera with fresh seasonal fruit.
At the end of the class you will eat these delicious dishes, accompanied by our own Chianti Colli Senesi wine, all together, with Nonna Ciana, her assistant and interpreter and the other participants in the class in the best Italian tradition. After all, while Italian cooking is about tradition and about the simplest and freshest local ingredients, it is also very much about enjoying sharing great food with friends and family, letting good food and wine bring people together.
