Cooking on Italy's Amalfi Coast: Full Day and Full Immersion Programs with Regional Wine Pairings
Overview
Our cooking programs on the Amalfi Coast are unlike any other in Italy. Taking place on an organic farm in a spectacular setting overlooking the Mediterranean sea, our unique farm is completely surrounded by terraced olive orchards and beautiful gardens. Coming here, is in fact like stepping into a secret garden and the flowers from the estate are harvested and sold in locations all over Sorrento and the Amalfi Coast by the owner Luigi who is an agronomist who has dedicated his entire life to the study of the local vegetation in all forms and how to incorporate them into the local cuisine.
The location itself and the entirely natural ingredients which are used in our cuisines here are second to none. Our local staff who run the programs have been living in the area for centuries and are expert producers of lemon varieties and other ingredients unique to this area.
Our programs here range from full immersion 1 day courses or multi-day intensive courses focused on the various ingredients, local traditions and modern ways to cook healthy, incredibly flavor rich cuisine.
Our lessons are taught in English by our expert chefs who are not only wonderfully skilled themselves in the kitchen, but also teachers of Southern Italian cuisine. Our hands-on cooking experiences take place in a well lit, almost greenhouse like studio, with hanging flowers from the local garden and a variety of local produce we hang there as well, like our tomatoes, onions, garlic and others.
Our daily lessons range from gourmet vegetable preparations, fine Sea-food and Pasta dishes and a variety of other egional dishes that we will prepare and taste during the day in addition to some of the region's finest wines.
In each class we allow a maximum of 10 participants . You may even want to consider doing more than one course during your stay, because every day you have the possibility to learn a different menu and you always eat what you have prepared during the lesson. Most of the dishes chosen can be easily made at home and the ingredients can generally be found in your country of origin. They are surprisingly simple to prepare yet are unforgettably flavorful and will have a profound effect on your future guests.
Your program will give a balanced knowledge to acquire the principal techniques for dressing the plates, making the fresh dough for pasta, pizza and bread, learn about fish, vegetables meat and legumes, ending by creating fresh and delicate pastry.
Our programs generally start at 10 AM where we will provide a brief overview of the lesson explaining the menu of the day and giving each participant a book of recipes, making a list of ingredients for the shopping bag where to put everything at the end (even your doggy bag!) 11 AM first tasting of the appetizer prepared (generally fritters!) with a flute of Prosecco wine. After we conclude the lesson at the end and everybody can seat at the big dining table to eat what has been prepared and enjoy local wine and limoncello liqueur as digestive.
Over the course of the day you can also ask us for different gastronomic activities, which will expand your knowledge on the Neapolitan culinary resources and culture.

Hotels
1. Hotel Sovestro in San Gimignano was wonderful. The staff were very friendly and helpful and made the first portion of our journey very stress free. They made us feel like we were part of their family. I would recommend it to anyone and would specifically ask for it if we were to make a return visit.
2. Hotel La Baia in Monterosso was nice and it's location was very good especially for us older folks humping luggage from/to the train station.
3. Hotel Lucchesi in Florence- what can I say expect FANTASTIC. The rooftop view at sunset is well worth it. Again very friendly and helpful staff. Would recommend it to everyone.
Wine Tour
Money well spent. We had a great time overall. The driver Mario was OUTSTANDING. He had lots of local knowledge as well as about winemaking. USE HIM AGAIN!!!
The various wineries we visited on tour:
Altesino- fantastic and they were not cheap on their pouring. Great experience.
Azienda Agricola Patrizia Cencion Sloaria- Again a great tour by one of the owner's daughters. We felt like we were the only thing on their mind although there were other customers there. A great way to complete the day.
Again we had a fantastic time and are very appreciative of everything you booked for us. We wish you continued success and if our travels should bring us back to Italy, we know who to call.
