Traditional Amatriciana sauce

Serves: 4

Cooking time: 15 minutes

Difficulty: easy

Ingredients:

1lb of dried spaghetti
12oz of peeled tomatoes (ideally San Marzano)
5oz of salted and dried pork jowl bacon or smoked bacon
½ glass of white wine
1 hot chili pepper, chopped
salt, pepper
grated Pecorino cheese
1 tbsp of olive oil

Method:

1. Cut the bacon into small dices and sauté with the chili pepper. When the bacon is gently browned, add the wine, let it evaporate, and remove the bacon to a plate, reserving the fat in a pan.

2. Add the tomatoes to the pan, and cook on high heat for 10 minutes, season with salt and pepper.

3. In a separate pot cook the spaghetti in a large amount of boiling salted water. Drain the spaghetti once it’s cooked to al dente and return to the pan, mix with the tomato sauce, add the cooked bacon and grated cheese.
